Felt like having a savoury brunch one Saturday. Was craving gourmet sausages. Rummaged through my pantry and I came up with this brilliant and simple dish – Chorizo and spinach frittata (perfecto!). Trust me, you will WANT to make this again and again. OK. I shall not digress further, here is the recipe!
2 chorizos, thinly sliced
Sea salt and pepper
Half large red onion, diced
1 teaspoon oregano
1 tablespoon coconut oil, ghee or butter
Preheat oven to 375 deg (190 celc).
Whisk together eggs, herbs, salt and pepper and leave aside.
Grease a 9 X 13 inch baking dish (or pan) with ghee, butter or coconut oil.
Sauteed onions until soft and cooked.
Pan fry sliced chorizos until cooked.
Add spinach and egg mixture into the pan.
Leave it on low-medium heat for 12-15 minutes until you get a good consistency of the eggs.
Put into oven and bake for 15 minutes or until the eggs are cooked perfectly.
