If you have a busy weekend, this meal preparation is by far one of the easiest and most delicious meal. I prepared this meal in 15 minutes and then left it marinated overnight in the fridge. Popped it into the slow cooker the next day, went out to have fun and come home just in time for a warm scrumptious paleo dinner.
Serves: 4
Ingredients:
approx 10 pieces short beef ribs (grass-fed, preferably)
3 tomatoes, diced into small cubes
1 cup chicken stock (organic, preferably)
Mixed herbs (basil, rosemary, chilli flakes, oregano) – I used McCormick’s mixed herbs from the jar
4 tbsp tomato paste
Salt and pepper
2 tbsp garlic powder
Method:
Mix dry ingredients (garlic powder, salt, pepper and mixed herbs) and set aside.
Heat up a saucepan on medium heat. Throw in diced tomatoes and tomato paste. Lower heat after a few minutes and simmer until tomatoes break down, forming a starchy sauce.
Add 1/3 cup water into sauce pan. And simmer for another few minutes.
Marinade beef ribs with dry ingredients first and then the tomato sauce. Leave this overnight in the fridge.
Lay the ribs evenly in a slow cooker/crockpot. Add chicken stock and cook in low heat for 7-8 hours.
